Apple Cider Donuts

Ingredients
  

  • 1 1/2 cups apple cider
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp apple pie spice (I did not add)
  • 1/4 tsp salt
  • 2 tb unsalted butter, melted
  • 1 egg
  • 1/2 cup dark brown sugar
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1 tsp vanilla extract
Topping
  • 1 cup granulated sugar
  • 3/4 tsp ground cinnamon
  • 3/4 tsp apple pie spice (I did not add)
  • 6 tb unsalted butter, melted
Glaze Topping
  • 1 cup Confectioners Sugar
  • a few tablespoons of Milk

Method
 

  1. Simmer the apple cider in a saucepan over low heat until about 1/2 cup is left. May take approximately 20 minutes. Let cool for 10 minutes.
  2. Preheat Oven 350F ~ spray donut pan with non-stick spray.
  3. Whisk together the melted butter, egg, brown sugar, sugar, milk and vanilla. Pour into the dry ingredients, add the reduced apple cider, and whisk all together to combine until smooth. Will be thick.
  4. Spoon into donut tray, filling each about 1/2 to 3/4 full.
  5. Bake for 10 minutes(less for small donut pan), edges will be slightly browned. Cool for 2 minutes, then transfer to wire rack.
  6. Combine topping ingredients (exept butter). Once donuts are cool, dip donut into melted butter and then sprinkle donut with topping mix.
  7. OR mix the confectioners sugar with a few tablespoons of milk until smooth and dripping and with a spoon add glaze to the top of each donut.
