Ingredients
  

  • 1 pound ziti (or favorite tube pasta)
  • 2 tb olive oil
  • 3 tsp minced garlic
  • 2 15 oz, plus 1 8 oz, cans tomato sauce (38 oz total)
  • 1 15 oz can diced tomato
  • 1 tsp of each dried oregano, sugar, salt, pepper and basil
  • 1 cup heavy cream
  • 1 tsp corn starch
  • 1 16oz container cottage cheese
  • 2 eggs beaten
  • 1 1/2 cups parmesan cheese (or measure with love)
  • 1 1/2 cups mozzarella cheese cut into cubes (I used fresh)
  • italian sausage (1 pound or two) ~ baked.

Method
 

  1. Preheat oven to 350 degrees. Grease a 9 x 13in pan
  2. Cook pasta according to package directions. Drain and set aside.
  3. In a large saucepan place oil and garlic and saute over medium heat until warmed thru. Add tomato sauce, diced tomatoes and seasoning. Cook for 10 minutes or so. Turn off the heat.
  4. Meanwhile pour 'cold' cream into another saucepan and whisk in the cornstarch. Then simmer over medium heat for about 5 minutes. Remove from heat and add the cottage cheese, eggs and about 1 cup of the tomato sauce mixture, along with 1/2 of the parmesan. Stir to combine.
  5. Then add the cooked pasta to the cream and cheese mixture ~ I mixed all this together in the 9 x 13 pan. Stir until coated. Pour remaining tomato sauce mixture over the top. Then sprinkle with parmesan and cubed mozzarella cheese.
  6. Cover with foil and bake for 30 minutes. Then remove from the oven, add in the baked italian sausage, remove foil and bake for another 20 to 30 minutes. Ready To Serve!
