Cheeseburger Soup

We’ve been choosing to ‘Dine-In’ over the past few years and hence I’ve been learning to Cook ‘better’ ~ I love the part of knowing what goes into each recipe and choosing each ingredient, it just makes for a tastier and healthier meal.

I’ve made a few Cheeseburger Soup Recipes along the way and have found that ‘this one’ hit all the ‘Cheeseburger‘ flavor notes with each slurp, right down to the mustard.

Adjusting the flavors is always optional when cooking and is an enjoyable process to make it your own…..just another creative outlet, I guess.

Cheeseburger Soup, Have It Your Way

Ingredients

  • 1 small chopped onion
  • 2 chopped carrots
  • 2 cloves minced garlic
  • a sprinkle of kosher salt and pepper
  • 1 lb ground beef (I used a pound and half)
  • 2 tb yellow mustard
  • 1 16oz drained diced tomatoes
  • 3 c chicken broth
  • 2 c shredded cheddar cheese
  • 1 c half-and-half
  • 3 tb all-purpose flour
  • add optional ingredients such as bacon bits, celery, sesame seeds, ketchup, etc

Instructions

  • Add onions and carrots to pot and cook until soft approximately 5 minutes, then add garlic and cook another minute or so.
  • Add ground beef, break up and simmer until cooked thru. Drain fat, then add salt and pepper.
  • Stir in mustard, diced tomatoes and broth. Bring to a simmer and let cook for 10 minutes. Lower heat then add cheese, half-and-half and flour. Cook until the cheese has melted and soup has thickened about 15 minutes.
  • Serve with a side of buttered bread. A hamburger bun!

Serve your soup onto a table covered with a fun red and white checkered tablecloth, then add your favorite 50’s tunes on the radio….don’t forget to add a toasted buttered hamburger bun on the side!
