Cheesy Chicken Chili Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 diced onion
  • 2 minced garlic cloves
  • 1/2 tsp dried oregano
  • 1/2 tsp ground cumin
  • cilantro to taste
  • 9 oz green chilis (temp to taste)
  • 2 large chicken breast cut into sizeable chunks
  • 5 cup chicken broth
  • salt & pepper
  • 2 15oz can white beans rinsed and drained (or white beans soaked and prepared)
  • enough frozen corn to taste
  • 1/2 cup sour cream
  • 1 1/2 cup shredded monterey jack cheese
  • crushed tortilla chips for garnish

Method
 

  1. in a large pot over medium heat ~ heat olive oil, onion, garlic and spices, 5 minutes.
  2. add green chiles, chicken, and broth. season with salt and pepper. bring to a boil, reduce heat to a simmer, cover and cook for approx 10 minutes, until chicken is tender and cooked thru.
  3. remove chicken and shred, then return to pot, along with the prepared beans and corn. Let cook 15 minutes.
  4. stir in sour cream and cheese and heat thru.
  5. add chili into bowls, add crushed tortilla chips and additional cheese if desired.
