Are you ready for a ‘Soup’er Bowl‘ Party this coming weekend?
It has been tradition at my Sister’s house to host a ‘Superbowl’ Party along with our favorite Soups and fixin’s.
With Mom, my 2 Sisters and my Sister-in-law, my Niece and myself ~ we’ve got the makings for a delicious meal, each bringing our favorites!
I’m not quite sure if any of us watch the actual game (well, maybe the guys do)….but we sure gather-’round the table for good eats and good conversation!
Here are two of my favorite soups!
Cheesy Chicken Chili Soup



Cheesy Chicken Chili Soup
Ingredients
- 1 tbsp olive oil
- 1 diced onion
- 2 minced garlic cloves
- 1/2 tsp dried oregano
- 1/2 tsp ground cumin
- cilantro to taste
- 9 oz green chilis (temp to taste)
- 2 large chicken breast cut into sizeable chunks
- 5 cup chicken broth
- salt & pepper
- 2 15oz can white beans rinsed and drained (or white beans soaked and prepared)
- enough frozen corn to taste
- 1/2 cup sour cream
- 1 1/2 cup shredded monterey jack cheese
- crushed tortilla chips for garnish
Instructions
- in a large pot over medium heat ~ heat olive oil, onion, garlic and spices, 5 minutes.
- add green chiles, chicken, and broth. season with salt and pepper. bring to a boil, reduce heat to a simmer, cover and cook for approx 10 minutes, until chicken is tender and cooked thru.
- remove chicken and shred, then return to pot, along with the prepared beans and corn. Let cook 15 minutes.
- stir in sour cream and cheese and heat thru.
- add chili into bowls, add crushed tortilla chips and additional cheese if desired.
Add a jalapeno pepper if desired for an extra dash of ‘hot’ stuff!

Zuppa Toscana (Olive Garden Copy-Cat)



Zuppa Toscana
Ingredients
- 1 lb Italian Sausage cooked and cut into diced slices
- 2 large russet potatoes, diced
- 1 diced onion
- bacon bits to taste
- 2 cloves minced garlic
- 2 cups chopped kale or swiss chard
- 32 oz chicken broth
- 1 qt water
- 1 cup heavy whipping cream
Instructions
- to a large pot add onions, potatoes, broth, water, garlic and cook on medium heat until potatoes are done.
- add sausage, bacon bits, and salt & pepper to taste. Simmer for 10 minutes.
- turn heat down to low and add heavy whipping cream and kale. Heat thru.
- Serve!
Double the recipe for a crowd or for a busy evening, with left-overs!
Serve along-side sliced and buttered crusty homemade bread, Yum!
