Zuppa Toscana

Ingredients
  

  • 1 lb Italian Sausage cooked and cut into diced slices
  • 2 large russet potatoes, diced
  • 1 diced onion
  • bacon bits to taste
  • 2 cloves minced garlic
  • 2 cups chopped kale or swiss chard
  • 32 oz chicken broth
  • 1 qt water
  • 1 cup heavy whipping cream

Method
 

  1. to a large pot add onions, potatoes, broth, water, garlic and cook on medium heat until potatoes are done.
  2. add sausage, bacon bits, and salt & pepper to taste. Simmer for 10 minutes.
  3. turn heat down to low and add heavy whipping cream and kale. Heat thru.
  4. Serve!
