Potato Tomato Quiche

Ingredients
  

  • 3 cups shredded uncooked potatos (or I have used shredded frozen hash browns in a pinch)
  • 1/2 cup chopped or sliced onions
  • 3 tbsp olive oil
Filling
  • 2 eggs beaten
  • 1 cup milk or heavy cream
  • 2 cups browned and sliced pork sausage (or any favorite 'meat')
  • 1 1/2 cup shredded cheddar cheese
  • 1 sliced tomato, fresh from the garden
  • seasoning to taste, we used salt, pepper, parsley and oregano

Method
 

  1. Mix together shredded potatoes, onions and oil. Press into a deep pie dish and Bake at 400 degrees until browned, about 10 minutes.
  2. In a small bowl beat eggs and cream.
  3. Remove the crust from the oven and layer (or a mixture) sausage, cheese and tomato over crust. Then pour the egg mixture over the top and sprinkle with seasonings. Bake at 350 degrees for 40 minutes. Let set for 10 minutes so the egg mixture can set up.
  4. Slice and Enjoy!
