
There was a time when I would turn my nose up at any ‘dish’ made with eggs.
I remember a time being invited to a Baby Shower and the family served many differnt types of Quiche ~ first of all my thoughts were ‘what the heck is ‘quiche???’ , being young and naive….and then realizing, ‘this Quiche thing is all eggs!’, gulp. Needless to say I went right for the dessert table and found ‘my comfort food‘. Then responding to anyone who asked, ‘oh, I have already eaten’. gulp, and double gulp.
Thank Goodness for grown-up taste buds.

Jerry’s garden is pretty plentiful this year. The deer and rabbits have left us a few things to nibble on. The tomatoes are ready ~ so I am ready to try a few new recipes.
This new recipe is very similar to our Ham and Tomato Pie (made here), except the ‘crust’ is created with shredded potatoes.
…and yes, it has a few eggs in it.

along with onions, cheese, pork sausage and seasonings.
Simply Enjoying the Harvest

Ingredients
Method
- Mix together shredded potatoes, onions and oil. Press into a deep pie dish and Bake at 400 degrees until browned, about 10 minutes.
- In a small bowl beat eggs and cream.
- Remove the crust from the oven and layer (or a mixture) sausage, cheese and tomato over crust. Then pour the egg mixture over the top and sprinkle with seasonings. Bake at 350 degrees for 40 minutes. Let set for 10 minutes so the egg mixture can set up.
- Slice and Enjoy!
