Red Velvet Baby Bundt Cake

Ingredients
  

  • 1 8 oz package cream cheese at room temp
  • 1 1/4 cup salted butter at room temp
  • 3 cups sugar
  • 6 large eggs at room temp
  • 2 tsp vanilla extract
  • 3 cups cake flour
  • 1/4 cup cocoa powder
  • 1/4 cup buttermilk at room temp
  • 3 tsp food coloring or keep adding until it is the color you prefer
  • 4 oz cream cheese for frosting at room temp
  • 2 1/2 cups confectioners sugar for frosting
  • 2 tb whole milk for frosting
  • 1 tsp vanilla for frosting

Method
 

  1. preheat oven to 325
  2. prepare bundt pan with butter and flour by spraying with non stick spray.
  3. in a mixer combine cream cheese and butter and mix until smooth. , gradually add in sugar and mix until light and fluffy.
  4. add eggs one at a time mixing well after each addition, add vanilla
  5. slowly add the cake flour and cocoa powder and mix well
  6. remove the bowl from the mixer and pour in the buttermilk. Mix by hand until incorporated with a rubber spatula, scraping the sides of the bowl.
  7. fold in the food coloring (I added alot to get the perfect Red).
  8. pour batter into prepared pans (I used several small bundt pans) ~ I baked for a half hour and then checked for doneness. larger pans will take longer. A toothpick inserted should come out clean.
  9. cool at room temperature, invert onto plate to add frosting.
  10. in a bowl combine all frosting ingredients and mix until smooth. Drizzle over cake.
