In our neck of the woods ‘Cabbage Recipes’ are a mainstay in our kitchens with Haluski, Halupki, Perogies and even Lakeside Potatoes on our menus. You will even find each dish served at local festivals and Church events.
My Hubby worked at a local Cabbage Farm thru his teenage years. He also ‘jars’ sauerkraut with his Uncle Joe and Friends each and every year….secret recipes handed down from one generation to the next.
Cabbage Roll Stew has become a favorite in our home. There are many variations…this one among my favorites! It is quick, simple and made in the crockpot, then served over rice.
My Mom makes a similar variation using Tomato Soup!
Cabbage Roll Stew
Ingredients
2 15oz cans petite diced tomatoes, drained
1 15oz can beef broth
1 8oz can tomato sauce
1 tbsp cider vinegar
1 tbsp worcestershire sauce
1 tsp garlic power
1 tsp cajun seasoning
salt and pepper to taste
1 head of cabbage cut into pieces
1 1/2 lb ground beef – cooked
1 lb italian sausage – cooked
1 onion chopped – cooked with beef and sausage
minced garlic to taste, cooked with beef and sausage
cooked rice for serving
Directions
Cook Beef and Sausage with Onion and Garlic until done.
Place chopped Cabbage in Crock-Pot
Mix first 8 ingredients
Top Cabbage with Meat
Pour Tomato Mix over Cabbage and Meat
Cook covered on low about 6 hours.
Serve over cooked Rice.

Salty Caramel Pecan Treats….a treat for sure!
A tasty after-school treat or mid-day snack.
Salty Caramel Pecan Treats
Ingredients
12 Graham Cracker Sheets
1 C packed Brown Sugar
3/4 C Butter
2 tbsp Whipping Cream
1 tsp Vanilla
1 Cup crushed Pecans
Kosher Salt to sprinkle
Directions
Line cookie sheet with aluminum foil and spray with non-stick cooking spray
Arrange Graham Crackers onto the cookie sheet in a single layer
Bring Sugar, Butter and Whipping Cream to a Boil, stir often
Stir in Vanilla and Pecans and remove from heat
Pour Mixture over Graham Crackers.
Bake at 350 for 10 Minutes.
Remove from Oven, Sprinkle with Kosher Salt.
Cool Completely, then break apart to serve.
Add a little Chocolate if desired….after removing from oven (and before cooled), sprinkle with chocolate chips, oh boy!
