Laura’s Chicken Bundles | Snack Table Dining

Sharing recipes for cooking and baking has become another favorite thing to do thru Social Media and thru Blogging.

I must admit my cooking and baking has come along way since we married 32 years ago…..just ask Jerry.

Now it is rolled into the fabric that unfolds thru the Blog of Classic Amy Joanne….who knew, right Mom?

While creating a menu for the week from various cookbooks and then creating the meal plan and grocery order, it has become something to look forward to and share…..all a part of Art & Home.

A fellow painting designer, Barbara Bunsey and I have grown to be good friends thru our love of painting and have found we also both enjoy a lot of the same hobbies, such as gardening, our homes and yes, cooking too! I am fortunate enough to have met Barbara during a Painting Seminar.

Barbara mailed a beautiful gift to me, a family cookbook (that is now out of print), I will treasure it. The family cookbook has a beautiful dedication to Maryellen Bunsey inside the cover and tucked inside is a sweet note from Barbara. Yes, a treasure for sure.

I asked Barbara if I could share a recipe with you….and she graciously said ‘why of course’! So here is a recipe from Maryellen Bunsey’s cookbook, a gift from Barbara Bunsey, made by Amy Mogish, and the recipe name is Laura’s Chicken Bundles!

A gift that keeps on giving.

Laura’s Chicken Bundles

Ingredients

  • 3 chicken breasts cooked and chopped
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese (or replace with 4oz softened cream cheese)
  • 3 packages of crescent rolls
  • melted butter for brushing
  • 1 cup crushed stuffing mix

Directions

  1. Mix chopped chicken, soup and cheese in a bowl.
  2. Open crescent rolls and form the triangles into squares by pinching together.
  3. Place about 1/2 Cup of mix into each square and pull up corners and sides to wrap into a bundle. Be sure all sides and seams are sealed.
  4. Brush the tops with melted butter and sprinkle each with crushed stuffing mix.
  5. Place on cookie sheet crumb side up.
  6. Bake at 350 degrees for 20-25 minutes.
  7. Enjoy!

Thank you Barbara for this beautiful gift and for encouraging me to read the dedication. It is something I don’t always do…..and found it to be encouraging, inspiring and light hearted. I find myself now wanting to know more about cookbook Authors and their stories. I also love the hand written notes by recipes that you have enjoyed yourself…..I cannot wait to try them all.

Laura’s Chicken Bundles were yummy, served up with buttered carrots….and another keeper!

As I am writing this, Grandma Bunsey’s Kielbasa and Kraut is in the Crockpot and boy does it smell good!
