Crockpot Ham & Scalloped Potatoes

At the first sign of Autumn I’m ready for a delicious Casserole in the CrockPot, how ’bout you?

…not to mention curling up on the sofa with a good book and a crochet afghan.

but anyway.

Our first CrockPot meal of the season was Scalloped Potatoes and Ham (with some extra fixin’s) which was somewhat following a Paula Deen Recipe ~ making a few tweaks for our tastebuds.

Enjoy this traditional Recipe with all the extra fixin’s

  • 2 tb butter
  • 1 c onions, chopped (or to taste)
  • 1/4 c flour
  • 1 1/2 c milk
  • 1 1/2 c heavy cream
  • dash of salt and pepper
  • 3 pounds red potatoes, sliced (skins on or off)

  • 1 c frozen corn (to taste)
  • add any vegetables of your choice!
  • diced ham, to taste
  • 2 c shredded white/yellow cheddar

Instructions

  • Prepare butter and onions in a pan over medium heat until tender. Then whisk in flour for 2 more minutes. Then gradually add milk, cream and seasonings, whisking often until mixture is thick, about 10 minutes.
  • In Crockpot, layer potatoes, then veggies, then ham, then cheeses, then sauce, repeating layers until full. Then cover and cook on low until tender about 10 hours.
  • Oh so delicious. Enjoy!

A sure belly filler. You will now need the good book and an afghan to relax on the sofa. You’re welcome.

enJOY!
