Real Banana Bread

As I explained thru the ‘Daily Dose(here) ~ this banana bread is not really a dessert bread or even a breakfast bread, it has no added sugar and yet it is one of the best banana breads I have ever tried.

To add a little sweetness to this banana bread, simply add a drizzle of honey while the bread is still warm ~ you can also serve it up with a drizzle of additional honey or add a sprinkle of powered sugar. Of course adding more chocolate chips is an option no one can argue with!

Banana Bread

Ingredients

  • 4 med mashed ripe bananas
  • 1 cup whole milk ricotta cheese
  • 1 1/2 cup whole pastry flour (I used cake flour)
  • 2 eggs
  • 2 tsp baking powder
  • pinch of kosher salt
  • 2 tsp vanilla

optional

  • 1 cup dark chocolate chips (or measure with love)
  • honey for drizzling
  • a sprinkle of powdered sugar to serve

Instructions

  • Bake in a 350 degree oven in a lined 9×5 inch loaf pan with parchment paper.
  • in a medium bowl mix until combined ~ the mashed bananas, ricotta cheese, eggs, and vanilla. Then add the flour, baking powder and pinch of salt. Stir in chocolate chips.
  • pour into prepared pan. bake for 40 to 55 minutes. drizzle with honey while warm if desired. Serve warm or cold with additional honey or a sprinkle of powdered sugar.
