As I explained thru the ‘Daily Dose(here) ~ this banana bread is not really a dessert bread or even a breakfast bread, it has no added sugar and yet it is one of the best banana breads I have ever tried.

To add a little sweetness to this banana bread, simply add a drizzle of honey while the bread is still warm ~ you can also serve it up with a drizzle of additional honey or add a sprinkle of powered sugar. Of course adding more chocolate chips is an option no one can argue with!

A tasty and nourishing Banana Bread! Recipe below.

Banana Bread

Ingredients
  

  • 4 med mashed ripe bananas
  • 1 cup whole milk ricotta cheese
  • 1 1/2 cup whole pastry flour (I used cake flour)
  • 2 eggs
  • 2 tsp baking powder
  • pinch of kosher salt
  • 2 tsp vanilla
optional
  • 1 cup dark chocolate chips (or measure with love)
  • honey for drizzling
  • a sprinkle of powdered sugar to serve

Method
 

  1. Bake in a 350 degree oven in a lined 9×5 inch loaf pan with parchment paper.
  2. in a medium bowl mix until combined ~ the mashed bananas, ricotta cheese, eggs, and vanilla. Then add the flour, baking powder and pinch of salt. Stir in chocolate chips.
  3. pour into prepared pan. bake for 40 to 55 minutes. drizzle with honey while warm if desired. Serve warm or cold with additional honey or a sprinkle of powdered sugar.
