Or is it Lemon Coconut Blueberry, or is it Coconut Blueberry Lemon?


Anyway, this is one of my go-to Summer recipes from the pages of Paula Deen Magazine July 2009.
The lemon in the recipe is just the zest, it amazes me every time how much flavor can come from zest.

When it comes to flavoring …a shake or two extra of coconut or blueberry will never hurt.

~Recipe~
1/2 cup softened butter
3/4 cup sugar
2 teaspoons lemon zest (give or take)
2 large eggs
5 tablespoons heavy whipping cream
1 cup all-purpose flour
1/2 cup sweetened flaked coconut (more or less as desired)
1/2 cup fresh blueberries (with an extra few)
preheat oven 350° and spray muffin pay with non stick cooking spray.
beat butter, sugar, and zest until fluffy at medium speed.
add eggs one at a time beating after each addition.
reduce mixer to low and add cream. then beat in flour just until combined.
stir in coconut, then fold in blueberries.
spoon batter into prepared muffin cups and bake 25 minutes. Cool.
Now, this is the really important part……be sure no one is looking and lick the beaters and bowl….The batter is extra yummy. No need to share, really!

I know I could be really good at it if I tried…cooking and baking that is. But I simply run out of time anymore….in fact, I used to host a Colored Pencil Workshop once a month in my home which included dinner and dessert! ….miss those ladies and those times!
Maybe it is more about photography and playing with my pretty vintage ironstone dishes now-a-days!

once I start I cannot stop…so glad I was home alone! I secretly left extra in the bowl, just for me!
