Polish Stir Fry|Snack Table Dining

It wasn’t until we were several years into our marriage that I started to enjoy cooking, baking and collecting cookbooks and recipes …..to feed us for the next 200 years. I believe it was when Cable TV reached our area and the Food Network was new that it really sparked an interest. I was a Rachael Ray and Paula Deen follower for sure….and still am.

One of the first cookbooks I can remember cooking from is by Rachael Ray and is shown below…..I would make weekly shopping lists by the ingredients and then making the meals as each day came and went. I still use this cookbook today and make notes by each recipe that are ‘keepers’. Most are.

And yes, I still create a list of recipes for the week and shop by the ingredients. Very routine, that I am.

The meal shown ‘Polish Stir Fry’ is one of our go-to meals from this cookbook…not only is it yummy but we use all kinds of local foods for the ingredients. Actually, two of the main ingredients are from a neighboring town, Shenandoah, PA. The pierogies are from Mrs T’s Pierogies and the smoked sausage is from Kovalenick’s Kielbasi Shop. Non finer. …folks wait hours in line at Kovalenick’s each Holiday for smoked meats, no kidding.

I believe Mrs T’s Pierogies is sold Nation wide and Kovalenick’s is a Mom and Pop local small ‘favorite’ business.

The Sauerkraut is made by my husband, it is a long time tradition in his family to jar and can home grown vegetables seasonally. After you enjoy this sauerkraut it is hard to go back to store purchased……just saying.

Even with the Kale mixed in ~ the meal is still good as leftovers. It is one of those dishes that you can add as much or as little as you want to your liking of all the ingredients.
