I was first introduced to Molly Yeh of ‘Girl Meets Farm‘ when I began streaming Discovery Plus TV ~ she inspired me with her down-home cooking and watched episode after episode.
Well, you probably know what followed that…..buying her Cookbook, ‘Molly on the Range’.
And the first recipe we tried was her Chicken Pot Tot Hotdish, it was Comfy Cozy Goodness ~ using fresh ingredients including a few veggies and then a toss of tator-tots.

Potato Tot Casserole
In our home, the following recipe has been dog-eared since 2010, in a ‘Quick-n-Easy Meals’ Paula Deen Magazine ~ this magazine sits on the shelf closest to the kitchen, a real go-to for many recipes, ‘Potato Tot Casserole‘ being one of them!
My hubby puts ketchup on this dish….usually I am the ‘ketchup-snob‘ in our home, but for this dish it is the hubby!

Those sound really good! I hadn’t heard of Molly Yeh until last year when she was on the Spring Baking Championship. LOVE those shows! Guess I need to start getting her recipes!
I have enjoyed a few of Molly’s recipes….simple and full of flavor!
