I wish I had the secret for ‘actual’ bites of energy, but for now these will do ~

…… try to eat just one, I dare you.

One of my favorite home decor bloggers Liz Marie (of Instagram Stories) (here) ~ mostly creates a cozy home, but she also talks about her health journey and has shared a homemade treat that looks loaded with delicious goodness and lots of chocolate chips, and I thought….”wow, I could go for that!

And while surfing for meal recipes I came across ‘Energy Bites‘ from the ‘Joy of Cooking‘ Cookbook and thought “hmmmm, this looks similar to Liz Marie’s treat”…..and who couldn’t use some energy!

They ‘whip up’ quickly and will have you checking off your to-do list in no time 🙂 with energy to spare!

Energy Bites

Ingredients
  

  • 1 Cup Peanut Butter, good quality
  • 1/2 Cup Honey, right from the hive
  • 1/2 Cup Chocolate Chips, dark chocolate
  • 1/2 Cup Raisins, plump
  • 1/2 Cup Nuts, I used mix (ground in food processor)
  • 1/2 Cup Coconut, I used shredded sweetened

Method
 

  1. Combine all ingredients except coconut and mix well. Form into bite size balls and roll into the coconut.
    I refrigerated for a few hours. Enjoy!

The funny thing is, it was a pretty busy morning and was mid-day when I finally made the ‘energy bites‘……I made em, took photos, poured a glass of milk, took another photo and than sat and enjoyed the ‘energy bite’ ….it was delicious by the way. But, (now here is the funny part) While enjoying this sit down moment and eating the ‘energy bite‘ I said to myself….’boy, I could use a nap’…..

welp, I’m not certain the energy bites are effective, but they sure are a tasty treat!

    I love energy bites. They are great with dried cranberries or crab-raisins and mini m$m’s. We call them protein candy😉
